Yummy Turkey Meatloaf

I have really enjoyed trying recipes that other friends and family have put up on their blogs. I decided I needed to share one our family favorites!

Niether Josh or I are huge meatloaf fans but I found this recipe in Real Simple and after trying it once has become a staple in our house. Even Sophi loves it! And the best part is that it is really good for you!



Turkey Meatloaf

1 and 1/2 pounds ground turkey (I use 1 pound and it works just fine for the three of us)
1 onion chopped (Josh doesn't like onion so I just use onion powder and it still tastes great!)
4 cups spinach, steams removed and chopped
1 cup flat leaf parsley, chopped
1/2 cup bread crumbs
2 tbs dijon mustard
1 large egg white
1/4 cup ketchup

Heat oven to 400. 
Combine turkey, onion, spinach, parsley, bread crumbs, mustard, egg white and 1/2 tsp salt and pepper.
Transfer mixture to baking sheet and form into a 10 inch loaf. 
Spread ketchup on top (I use a little more than it calls for!) 
Bake until cooked through, 45 to 50 minutes.

Serves well with smashed red potatoes and peas!

Sick days

Josh, Sophi and I have all been sick the past week and a half. I have had to come up with some indoor activities to keep our little one entertained as we all recovered! Thanks to the help of some moms on facebook I was able to find some fun craft ideas online. Here are a few of the projects we attempted:

 Painting Caterpillars
Not feeling so good...
 Our caterpillars completed
Making homemade fruit-roll-ups
 The finished product...they were ok but took way to long to make for the final result
 Some pretend play...making pizza!
 Fruity cheerio flower...a yummy snack time craft!

We had fun despite our runny noses and coughs! Thankful we are now on the mend!
